Be it ever so humble, a legume is any plant species that have seeds pods that split along the sides when ripe—a broad definition that encompasses thousands of beans and peas, varieties of which are cultivated on every continent. Aside from being versatile, plentiful, and cheap (even free if you grow your own), legumes are nutrition powerhouses, bursting with fiber, protein, vitamins and flavor.
