If you’re like me, last minute costume emergencies and pumpkin carving can sidetrack Halloween dinner. Enter this quick soup and sandwich combo that get a jumpstart from a rotisserie chicken, a box of Rice-A-Roni and packaged pizza dough. The chicken and rice soup takes well to all sorts of additions (arugula, please), but kids will love it plain. The calzones can be made ahead and baked while you’re fighting with the ghost outfit.

Feeling a bit more ambitious but still needing to cut down on your time in the kitchen? Try making homemade ravioli with the help of wonton wrappers—it’s an incredibly simple and fun project, plus they can be either made ahead of time and frozen or prepared the night of.
